The Origin of the Croquette

A croquette is a small cylinder or ball of filling that has been breaded and fried. Auguste Escoffier, a French culinary artist, created the modern form of these bundles of joy in France in 1898. Although Escoffier was the founder of this classic dish, Phileas Gilbert, another widely-known chef, was also involved in creating and writing down the original recipe. The two chefs had initially noted that croquettes were to be filled with potato, often in mashed form.

The word ‘croquette’ is rooted in the French word ‘croquer,’ which means ‘to crunch’ or ‘to bite.’ While a croquette is not crunchy all the way through, there is a satisfaction that comes with taking the first bite and breaking the outer shell of the snack. The crunch comes from the egg and bread crumbs that form the outer layer of the food, which is fried to hold everything in place.

After coming to life in France, croquettes made their way down to Spain, where they soon became trendy and prevalent. Once arriving in Spain, they adopted a new name, ‘croquetas.’ 

Rather than being filled with potatoes like the original croquettes, croquetas are typically filled with bechamel sauce, as well as some form of chopped meat. Bechamel sauce is a building block that provides the foundation for many classic recipes. When made purely, bechamel sauce is created from butter, flour, milk, and a small amount of seasoning.

For just a taste, we recommend ordering a small, which is two dozen. Our most popular order size is our medium that comes with three to four dozen croquettes, which is the perfect amount for a hungry family. And if you’re hosting a party, try our large size, which comes with five to six dozen treats.

The great part is that we don’t ship you pre-cooked croquettes. Instead, we send out unbaked, fresh-frozen pastries so that you can bake them fresh in your oven. The Porto’s Croquettes

Our ham croquette is a traditional croquette made with bechamel sauce, smoked ham, parsley, and Spanish seasonings. We recommend enjoying this with breakfast, brunch, or lunch. It is a perfect way to start your day, but you could even enjoy this as an afternoon pick me up to give yourself another reason to smile.

Our chicken croquette is also a traditional croquette made with bechamel, chicken, garlic, parsley, and Spanish seasonings. They make the perfect appetizer for a party, but they’re also great if you’re just looking for a little something to enjoy on your own.

Another classic of ours that we can also ship nationwide is our Potato Ball® (Papa Rellena). The Papa Rellena is a Porto’s Bakery classic that all of our guests adore. It is made with our signature potato puree, filled with Rosa’s original picadillo. Picadillo is a Cuban take on ground beef that includes onion, bell pepper, olive, and Spanish seasonings. The best part? The Papa Rellena has that crispy panko crust like croquettes!
